Product Description
One ingredient: safflower seed. Cold pressed and extra virgin, which means the oil comes out of the seed by pressure alone, without heat or chemical extraction, so it keeps its character rather than being stripped and refined into something neutral. It pours a clear, deep gold. Safflower oil is high in unsaturated fatty acids and has a clean, mild taste that does not compete with what you are cooking, which makes it useful for dressings, roasting vegetables, or finishing a dish where you do not want the oil to announce itself. This is also the most interesting bottle in our pantry from a Botswana point of view. Safflower is drought tolerant, needs little water and suits our climate, and it is being actively developed with smallholder farmers here as a locally grown alternative to imported cooking oils.
